Sopa de Lentilhas
Now that the weather is getting cold, let’s get some Lentil Soup which works very well when joined by red wine and good friends. I made up this Lentil Soup recipe a while ago. Although the look isn’t appealing, it tastes really good!
7 oz of sliced bacon, 2 medium onions, 1 pound of lentil, olive oil, 1/4 tea spoon of cayenne pepper, sazon marrom, 1 colher de café de noz moscada, 1/4 tea spoon of curry, 1 tea spoon of smoked paprika, 1/2 tea spoon of black pepper, 1/2 cup of soy sauce, 2 tablets of bacon “salt”, two tea spoons of mustard grains
Let the lentil simmer until it is soft. Using high flames it takes around 30 min;
In the meantime, put the olive oil in another pan with the pepper (black and cayenne);
cut the back in very thin tires, so you won’t notice them when eating; The thinner the better.
Cut the onions in small pieces, smaller then the lentil grain;
fry the bacon until it is crispy, very crispy;
put the onions, stir well so no bacon is kept attached to the pan bottom; do it until the onion is “golden”;
at this point the lentil might be ready. If not turn off the flame and wait.
On middle flame (keeping the bacon and onion very hot), add soy sauce and all the lentil, including the simmering water;
Add the remaining ingredients and stir continuously;
After 5 min the lentil soup is ready.
Serve while hot, accompanied by italian bread, red wine and good friends!
